The cornstarch will help tenderize the meat. Sauce: 1/2 cup soy sauce 1/2 cup orange juice 1/2 cup water 1/4 tsp sesame oil 1 tbsp cornstarch 2 tbsp brown sugar. Mix it up and set it aside. Now we're ready to cook our beef! In a large wok, add 1 cup of avocado oil - let it get really hot and then add the beef for a quick stir fry. Let it cook for 2-3 minutes until it gets crispy on the outside, and with a slotted spoon, remove onto a plate lined with a paper towel. Don't worry if the beef isn't totally cooked through, we'll finish it off with the sauce!! Now remove the cooking oil and with whatever is left in there, let the wok get hot again and add 1 tsp of minced ginger and garlic. Saute it for about a minute until it's nice and fragrant and then add the sauce. Let it come to a rapid boil and then toss our crispy beef back in to absorb the sauce. Once the sauce looks pretty thick, toss in 3 stalks of chopped green onions, give it another stir and voila!! Serve with brown rice and sauteed broccoli.
